liver, kidneys, sweetbread, tripe - in europe quoite common in the countryside or in some high-level restaurants...

done well (properly, not well done) this stuff tastes fantastic!

Usually I soak it in light vinegar solution(like 4 parts water to 1 part apple cider or rice vinegar) then chop nicely and mix with whatever you'd like(usually some sort of chopped onion-garlic mix with a splash of soy sauce+ if it feels tad bit too runny I'd add some bread crumbs). Then just fry it up like as you would your beef patties.

I've done liver , best soaked in Milk, came out awesome, main problem is liver and offal altogether because they are very rich sources of cholesterol

I understand 1 serving a week, I finished mine in 2 days

Fried liver, with onion's and mash YUMMMMMMMMMMMMMM

I've never done big hearts, only chicken, but yes would like to try that as well
