N54 low temperature

I'm a little worried about my oil and/or coolant temperature. It doesn't seem to ever get to "normal" values, even after driving for over an hour at 120-130kph (2500+ rpm with the DCT transmission). The oil temp gauge hardly goes past 80-85C (about 180F) and the coolant temp hangs around 55-60C (130-140F).
Reading other posts, it should point to a faulty thermostat but I don't get any codes. Is it possible that the thermostat fails and doesn't trigger any codes?
Here in southern Spain in winter we get as "low" as 3C (37F), so the atmospheric temperature shouldn't be an issue, certainly not for so long a drive.

If you don't drive at steady highway speeds for a while it's not unusual for a failed thermostat to not set a code.
