Freshest ingredients...because they have nowhere to store it. So whatever you're eating got slaughtered / picked / harvested within the last few hours if you take an early lunch while on patrol.
Flip side is sometimes when you try to eat indoors, their (completely open) restrooms are right next to the kitchens, so the smell overpowers the food and you just have to gag it down as best you can while they offer you more chai to wash it down with.
