One hour seems like a long time. The COBB unit only takes 20 mins. This increases the chance of something going wrong during this time.
Unless you go out of your way to screw up the installation you cant. The unit will always program if you follow the instructions. If you do figure out a way to mess up the installation any issue can be resolved. There is no way to "brick" the ECU.

Maps do not come pre-loaded. Software is made based on the vehicle and options desired and sent to the customer.
